Abstract
Researchers at Taiwan's National Chiao Tung University found a novel fungal chitosanase. The enzyme was extracted from a strain of the soil fungus, Paecilomyces lilacinus. When the isolated chitonase was used to hydrolyze 95% deacetylated chitosan, the main products were chitotriose, chitotetraose and chitopentaose. Two oligosaccharides, GlcN-GlcN-GlcNAc and GlcNAc-GlcN-GlcN-GlcNAc, were present in lesser quantities.
